OPENING ITS DOORS IN 1978 in Seattle’s historic Pike Place Market, EMMETT WATSON’S OYSTER BAR wasn’t just the city’s first oyster bar—it was the start of an oyster revolution in the Emerald City. Named after its founder, Emmett Watson—the legendary Seattle columnist known for his sharp wit and keen local observations—the bar set the standard for shellfish service in the region. Its fresh take on oysters quickly became a template for countless imitators in the Pacific Northwest.

In 1998, Emmett Watson’s Oyster Bar earned a spot in culinary history with the inaugural James Beard America’s Classic Award, a nod to its trailblazing role and enduring charm. This accolade cemented its reputation as a MUST VISIT Seattle staple and a beacon for bivalve enthusiasts that continues to this day.
